Chef apprentice
As the public's interest in food continues to grow, so does the demand for trained chefs. JCCC's chef apprenticeship program is sponsored by the American Culinary Federation, the Greater Kansas City Chefs Association and the U.S. Department of Labor. The three-year program consists of training under an American Culinary Federation chef member as well as formal course work. JCCC's was one of the first programs in the United States to receive American Culinary Federation Educational Institute accreditation. The 75-credit-hour program, which leads to associate of applied science degree, features formal course work along with the opportunity to actually practice such skills as baking, menu planning, food purchasing, beverage control and food preparation.
Pastry/baking
The 30-credit-hour selective enrollment pastry/baking certificate program is for those who want to work as pastry cooks in pastry/bake shops, hotels, restaurants or other areas that produce pastry and baked products. A37-credit-hour pastry/baking entrepreneurship certificate prepare you to open your own business with courses covering basic skills in pastry/baking preparation and small business development and management.
Food and beverage management
The JCCC food and beverage management program prepares you to enter restaurant, club or food service management as a trainee or assistant manager. Courses in supervisory management, hospitality accounting, food management, design techniques and advanced hospitality management provide a comprehensive management background. The 66-credit-hour program leads to an associate of applied science degree. A 32-credit-hour food and beverage management certificate can be completed in two semesters.
Hotel and lodging management
JCCC's 64-credit-hour hotel and lodging management program prepares you to enter hotel and lodging management, usually as a trainee or department supervisor. Courses in supervisory management, hotel accounting, hotel sales and marketing, and advanced hospitality management provide a comprehensive management background. In addition, you'll learn basic skills through courses in housekeeping, front office management, basic and intermediate food preparation, and beverage control. The program leads to an associate of applied science degree.
Various entrepreneurship certificates are available through hospitality management:
- A 32-credit-hour bed and breakfast entrepreneurship certificate provides you with the knowledge and skills you need to open a bed and breakfast.
- A 33-credit-hour catering entrepreneurship certificate prepares you with the knowledge and skills necessary to open a catering business.
- A 33-credit-hour hospitality entrepreneurship certificate prepares you to open a hospitality business.
- A 28-credit-hour sustainable agriculture entrepreneurship certificate teaches you how to develop a sustainable business based on market farming products.
