OVERLAND PARK, Kan. – The Johnson County Community College culinary team was the overall winner and best of show, winning the only gold medal awarded at the Festival Gastronomico Guatemala competition Aug. 21 in Guatemala City. The JCCC team was the only U.S. team invited to participate in the junior chef team competition. Other junior teams were from Guatemala, Mexico, El Salvador, Costa Rica and Peru.
All teams were required to prepare a menu using whole chicken, tilapia, corn and chocolate in a timed 21/2-hour competition. The JCCC team prepared a four-course meal for four people consisting, in part, of fillet of tilapia on fire-roasted corn and red pepper hash, oven-roasted tomato soup with prosciutto and fresh mozzarella, chicken breast filled with spinach and feta cheese, chicken ragout, chicken-apple-and-sage sausage, espresso-flavored Bavarian crème and warm chocolate cake with vanilla sauce.
The JCCC culinary team members are Dawn Juliana, Independence, Mo.; Andrew Parkhurst, Hermine Widjaja and Lauren Toews, Overland Park; and Darryl Bell, Kansas City, Mo. The JCCC culinary team coach is Felix Sturmer, associate professor of hospitality management.
The competition was sponsored by the Guatemalan Chefs Association and Pan-American Chefs Forum.
