JCCC continues Divine Dining with Oktoberfest
OVERLAND PARK, Kan. — Johnson County Community College continues its Divine Dining series of culinary classes with an Oktoberfest theme at 6:30 p.m. Friday, Oct. 30, in the Capitol Federal Conference Center of the Regnier Center.
Certified Executive Chef Gary Hild will lead the class and preparations for five food stations and one beer station.
Station one
Tossed garden salad with German-style dressing
Marinated vegetable salad
Pumpernickel, pretzels and caraway rye bread
Station two
Grilled knockwurst and bratwurst
served with mustards, condiments, home-style sauerkraut and Bavarian- style cheese
Station three
Braised pork shoulder with horseradish
Sweet and sour green beans
Spatzle
Station four
Chicken marinated with dark beer, braised with forest mushrooms and cream
Beef rouladen stuffed with pickled vegetable cooked in a red wine sauce
Warm German potato salad
Braised red cabbage with golden raisins
Station five
Baked apples with streusel topping
Black Forest cake
Beer station
German beers
Guests will receive a copy of the evening’s recipes and a JCCC hospitality management cookbook; one door prize will be given away.

Divine Dining classes began in August with sold-out attendance for the first class on French cuisine, also taught by Hild. Divine Dining is a partnership between JCCC’s community services and hospitality management program. Plans call for a new class every three months.
