JCCC offers fine dining, fine learning

OVERLAND PARK, Kan. — An Elizabethan courtier once wrote, “Sweet food of sweetly uttered knowledge.”

Well, Johnson County Community College has once again combined food and knowledge with its new series of culinary classes, Divine Dining. Each class will have a well-known local chef preparing a fine meal and teaching about a different cuisine from around the world.

The first Divine Dining class featuring Certified Executive Chef Gary Hild and cuisine from Northern France will be at 6:30 p.m. Friday, Aug. 14, in the Capitol Federal Conference Center of the Regnier Center, JCCC.

Hild teaches at the Culinary Center of Kansas City and is also chef consultant at Unity Village, Lee’s Summit, Mo. His career as an executive chef spans more than 30 years and ranges from hotel kitchens (Marriott, Registry Hotel, Embassy Suites) to operating his own catering company (New Century Catering). A participant in 17 marathons, he relates to the needs of amateur athletes. He continues his own education with classes at the Culinary Institute of America, Napa Valley, Calif.

The menu will be:

  • First course: Chicken rouladen stuffed with spinach and red pepper
  • Second course: Fillet of salmon in pastry served with fresh basil sauce and a variety of vegetables
  • Third course: Petite lettuces tossed in champagne vinaigrette served with cheese soufflé
  • Dessert course: French-style chocolate torte served with fresh raspberries and Chantilly cream

Each course will be paired with the chef’s selection of wine.

Guests will receive a copy of the evening’s recipes, a DVD from JCCC’s hospitality management program and a door prize.

Divine Dining is a partnership between JCCC’s community services and hospitality management program. Plans call for a new class every three months.
