Class Format

For face-to-face classes: Each class provides discussion, in-class practice, conversation, and group activities based on the reading assignment and project for the week. There will be online quizzes, access to syllabus and assignments.

For online classes: All lectures, quizzes, exams and assignments are online. All submissions of projects and papers are online. Class contains online group discussions required during the semester, and links to current topics to review and discuss

Online homework
 Occasional assignments outside of chapter quizzes
Projects: One to two major projects or paper comprise 30% of grade. These hands-on assignments allow students to actively practice their skills evaluating their own nutrition habits and researching a topic of choice for a research paper.
Extra Credit: Current events and topics evaluated for credit.


Quizzes: Online quizzes required over each chapter. These are learning tools you can use for study guides for each chapter and options to retake quizzes to increase your score.
Exams: Three to five exams total approximately 50% of grade.

Homework Policy

Assignments and quizzes will be due at specific times during the course of the semester. In some cases assignments must be completed before additional material will open and be available. It is the student’s responsibility to get any information and take exams on time. Exams are only made up in extreme circumstances at the discretion of the instructor.

Attendance Policy

You are expected to participate every week. Assignments are due on due date or earlier.
Attendance/participation: 5% of grade (two excused absences)

Additional Information

I'm looking forward to meeting all of you and introducing you to my passion, nutrition and lifestyle wellness. Although this course is "required" for many of you, I hope it still stirs your interest. Nutrition is a constantly changing field and a hot topic in the media, along with some critical environmental and political concerns. I encourage you to become more focused in the hands-on application of nutrition to your daily life.

I currently own an integrative functional nutrition and wellness business. Outside of work, I stay active outside in swimming, yoga, tennis, traveling and constantly learning new things. I came back to teaching at the college level in 2007. I’m hoping to give back some knowledge and experiences that I have discovered along the way during my career in nutrition and private practice.
